Black Velvet Chocolate Cake

INGREDIENTS

Cake Ingredients

- 1 1/2 c buttermilk, room temperature

- 3 c all-purpose flour

- 2 1/2 c sugar

- 1 1/2 c unsweetened baking cocoa

- 1 tbs baking soda

- 1 1/2 tsp baking powder

- 1 1/2 tsps salt

- 4 large eggs, room temperature

- 1 1/2 c warm stron brewed coffee (or warm water

- 1/2 c vegetable oil

- 2 tsps vanilla extract

INSTRUCTIONS

1. Preheat oven to 350 degrees F

2. Grease and flour three 9-inch round cake pans.

3. In a stand mixer on low speed, mix flour, sugar, cocoa, baking powder, and salt till combined.

4. Add eggs, buttermilk, water or coffee, oil, and vanilla.

5. Beat on medium speed until smooth. This should take just a couple minutes.

6. Do not over mix.

7. Divide batter among the three pans evenly.

8. Bake for 30-35 minutes, till a toothpick inserted in the middle comes out clean.

9. Cool on wire racks for 15 minutes. Then, turn the cakes out onto the racks to cool completely.

10. When cool, frost the layers and sides with vanilla butter-cream.

11. Chill the cake for about an hour. Then, pour chocolate ganache over the top and let it drizzle down the sides.

OTHER INGREDIENTS

Chocolate Ganache Ingredients

- 1 cup semi-sweet chocolate chips

- 1 cup heavy whipping cream

- 1 tbs white corn syrup

OTHER INGREDIENT INSTRUCTIONS

In a saucepan, heat cream to almost boiling.
Remove from heat. Pour the hot cream over the chocolate chips and corn syrup.
Let stand for 2 minutes. Then, stir with a whisk till smooth and melted.
Let cool for 15 minutes and pour over chilled cake.

Tip: For a great, whipped frosting: Let cool completely to room
