Fruity Chicken Salad

INGREDIENTS

  • 6-8 large chicken breasts cooked and shredded
  • 3 cups mayonnaise
  • 2 cups crushed pineapple, thoroughly drained
  • 2 cups Craisins
  • 2 cups chopped pecans
  • 2 cups sliced grapes
  • Salt and pepper to taste

METHOD

Mix all of the ingredients together.

If too dry, make additional sauce to thin it out. In a separate bowl mix 1 cup mayonniase, 1/2 cup chicken broth, 1 tablespoon of Better than Bouillon (chicken flavored), 1/3 cup water, and 1 tsp of salt. Slowly add to chicken mixture til desired consistency. Serve on croissants or in rolled up flour tortillas.

Makes approximately 1 gallon.
